Also known as 'Capocollo' or 'Capicola', this is an air-dried, salted and spiced pork product. Cut from the muscle between the neck and shoulder, the pork is cured in salt and spices and air-dried for up to 6 months. We offer our Coppa in both Mild and Hot varieties.
