A popular Italian delicacy, this is a dry-cured ham taken from the hind leg and thigh, salted for around 2 months, then air-dried in our climate-controlled coolrooms for up to 18 months. This produces a strong-flavoured dried ham with a buttery streak of fat, best served sliced paper-thin.
